These remasters do a little more than you may think based on first glance. They run at native resolution and 60 FPS whether you're playing them on Switch or Switch 2 and the textures have all been completely redone. The UI has been improved, Rosalina's storybook has been worked into Galaxy 2 and boasts new pages, and mouse controls have been implemented for couch co-op. The visuals hold up remarkably well, especially in native 4K on Switch 2. The joy-con controllers work as a perfect substitute for the Wii remote and nunchuck, with one minor caveat being that you may find yourself frequently pressing "R" on the right joy-con to re-center the aiming reticle that you use to collect star bits. Surprisingly, the gyroscopic workaround with the pro controller works really well and touch screen controls are enabled if opting for handheld play. The games themselves hold up brilliantly. They're as good today as they were when they came out. They're still arguably the best Mario has ever been in 3D. As good as Odyssey is, I don't think Galaxy is bound to be eclipsed anytime too soon.
