As it turns out, there's a pretty easy way to get the cover armour from Kingdom Come: Deliverance 2 early on in the game. So long as you're okay robbing from a robber.

u/hoe-punk pointed out that you can take Gules' gear without much fuss, and he'll even replace his stolen kit, "letting you steal it again."

There are a couple of ways to pull this off. The first is simple — wait for nightfall, and you can find Gules guarding the Semine gate all by himself. Knock him out and nick his clothes. Profit. Or if you want to be more subtle, "It all goes into the chests inside the Semine guard house when he goes to sleep," (thanks, u/inertSpark).

Just be careful not to wear his armour immediately after. You'll want to wait a few days, or they'll notice it's stolen.

Since everything gets reset — thankfully, like Gules' armour — you can easily boost your stealth skills with a bit of patience.
