Most of your memories of Fable probably involve ignoring the story and messing around with the life sim mechanics. The new developer, Playground Games, is aware of this and has spent a lot of time going over how these have been included and even expanded upon in the reboot.

One area that is being given even more depth is business management. In the originals, you pretty much just bought out a business and set the price of goods. Now, the new Fable will let you manage who works in your businesses, with different NPCs being better suited than others. You can also control their pay and keep an eye on how they're performing. Not very heroic, but it is very Fable.
